Picnic recipe - Salad idea with mozzarella mini

Preparation

  1. Put the quinoa in a pan with water and add salt. Cook until it is done.
  2. Halve the cherry tomatoes and cut the grilled chicken breast into small pieces.
  3. For the dressing, chop the pistachios with the avocado, jalapeno, garlic clove, parsley, lime juice, water and olive oil and blend.
  4. Mix the quinoa in a bowl with the tomatoes, spinach, mini mozzarella and chicken breast. Pour over the delicious dressing from step 3 and mix well again.

Tip:
Decorate with parsley before serving for a visual highlight.

For the salad:

  • 200g quinoa
  • salt
  • 150g cherry tomatoes
  • 100g grilled chicken breast
  • 60g spinach leaves
  • 120g GOLDSTEIG Mozzarella Mini

For the dressing:

  • 80g pistachios
  • 1 avocado
  • 1 jalapeno
  • 1 clove of garlic
  • 50g parsley
  • 2 tbsp lime juice
  • 60ml water
  • 50 ml olive oil


For garnish:

  • Parsley
