Rumour or truth?

Do certain cheese specialties really close the stomach?

A widespread myth is that cheese closes the stomach. Even in ancient Rome, people realised that certain cheese specialties could do much more than just taste good. For the Roman writer Pliny, a nice piece of cheese after a successful meal was a must. And he was right!

It has now even been scientifically proven that cheese closes the stomach. The fatty acids and proteins contained in cheese are responsible for this effect. They have the property of delaying gastric emptying and thus creating a longer-lasting feeling of fullness.

High-protein cheese specialities such as Parmesan, Appenzeller or our Goldsteig Emmental are therefore the perfect dessert.

Cheese is popular, and it is becoming even more popular! Per capita cheese consumption in Germany rose from 22.32 kilograms in 2009 to 24.53 kilograms in 2015.

But not all cheese specialties are equally popular. The cheese specialties Gouda, Emmental and Mozzarella are on the podium and enjoy the greatest popularity.

In fourth to tenth place are cheese specialties such as Parmesan, Edam and Camembert. In general, it can be said that semi-hard and hard cheeses are the most consumed cheese specialties.

In 2015, 83.8% of the German population stated that they ate these cheese specialities at least several times a month.

When you think of protein and calcium, you also think of healthy muscles and strong bones.

Proteins are extremely important for muscle building and should therefore not be missing from a balanced diet. With 18 grams of protein per 100 grams of cheese, mozzarella is a very protein-rich food. In comparison: 100 grams of eggs, which are a well-known source of protein, have "only" 13 grams of protein.

In addition to its protein content, mozzarella also has a high calcium content. With 731 mg per 100 grams of cheese, mozzarella is also good for bones and teeth! A real power pack!

If you want to enjoy your favourite cheese for as long as possible, good storage is crucial.

Cheese is always chilled in the cheese counter, so does it also need to be chilled at home? As there are many different cheese specialties, the ideal way to store them is always different.

The right cooling is crucial for Emmental cheese specialities. The perfect storage temperature for Emmental is between 2 and 6 degrees Celsius. At this temperature, the cheese does not ripen too quickly and does not lose any flavour.

Mozzarella, on the other hand, is stored in brine. It makes sense to store it in the same brine, as otherwise it will dry out quickly. After opening, store in the fridge for 24 hours, completely covered with the brine.
