Blackberry and pistachio tart

So simple and delicious!

Ingredients:
For the sponge cake
6 eggs
150 g sugar
1 pinch of salt
50 g pistachios
160 g flour
1 teaspoon baking powder

For the blackberry cream
6 sheets of white gelatine
400 g blackberries
1 organic lemon, juice + zest
150 g sugar
500 g GOLDSTEIG ricotta
400 g cream

For the decoration
250 g cream
3 tsp cream stiffener
1 handful of blackberries
Chopped pistachios

Preparation:
Line a baking ring with baking paper and preheat the oven to 180 °C top/bottom heat. For the sponge, beat the eggs, sugar and salt with a hand mixer for 5-10 minutes until white and creamy.
Sieve the flour, baking powder and pistachios over the mixture and carefully fold in with a spatula. Pour the mixture into the baking ring and bake in the preheated oven for approx. 25 mins.
Leave the sponge cake to cool completely and cut horizontally once. Puree the blackberries and pass through a fine sieve. Soak the gelatine in cold water and whip the cream until stiff. Mix the blackberry puree, the juice and zest of the lemon, the sugar and the ricotta well, squeeze out the gelatine and dissolve in a small pan over a low heat, stir in 3 tbsp of the cream and mix with the remaining cream. Finally, fold in the cream. Place the bottom cake layer on a cake plate and place a cake ring around it. Spread half of the blackberry cream on top, place the second cake layer on top and press down lightly. Spread the rest of the cream on top, smooth out and leave to set in the fridge for a few hours. For the decoration, whip the cream until stiff, remove a little and spread it around the edge of the cake. Use the remaining cream to pipe dots onto the cake. Decorate the edge of the cake with chopped pistachios, place the blackberries on top of the cream and sprinkle with pistachios.
