Is your Emmental cheese an analogue cheese / artificial cheese?

The cheese specialties we produce are exclusively real cheese. Our cheese is produced strictly in accordance with the German Cheese Ordinance. For our Emmental, for example, we only use the ingredients pasteurised cow's milk, table salt, microbial rennet substitute and lactic acid bacteria cultures.

What is analogue cheese?

Analogue cheese is an imitation cheese that actually has little to do with real cheese. Analogue cheese is often found as a pizza mix in the supermarket, for example. Analogue cheese is not made from milk, but from simple vegetable fat or animal fat such as beef tallow. To make analogue cheese look more like "real" cheese, colourings, flavour enhancers and aromas are added. It does not require any maturing time; the ingredients are simply heated and the artificial cheese is created.
